We ate cinnamon rolls for breakfast today. They were divine. I’ve never been much of a fan of pastries that don’t include chocolate, but I’ve always had a special place in my heart for Cinnamon rolls. Really, Cinnabons. Because…Cinnabon. Anyway, as it’s been 16 years since I’ve worked in a mall, I haven’t had a Cinnabon for years. We’ve never made them at home, because my wife is allergic to gluten, and the phrase “gluten-free pastries” is an oxymoron. Or, at least, it used to be. Since cutting out gluten, my lovely wife has missed pastries most of all. She doesn’t care much for cooking, but can bake like a boss! Well, thanks to the proliferation of gluten-free dieters, the quality of gluten-free foods and flour mixes has greatly improved. They’ve made Cinnabon-worthy rolls possible for those who cannot do gluten. Which brings us to this morning. My wife began the tradition of Christmas morning cinnamon rolls last year. What better way to celebrate the birth of Christ but with a sugar bomb in the morning?! A once-a-year cinnamon roll SHOULD be enough, but as we were combing through our pantry yesterday to survey the holiday damage, we realized we had some extra coconut flour and cream cheese. We couldn’t just throw them out! Plus, it’s the last day of vacation. So, cinnamon rolls! They were perfection. We kept the cream cheese out of the landfill and stored it on our waistlines instead.
